A built-in BBQ island is often the first step into outdoor cooking, and the one most often built badly. The usual problems are a base that heaves after a couple of winters, a grill with no room to set anything down, and an enclosure with no ventilation around the gas connection.
We build islands on frost-protected footings with non-combustible framing, then clad them in stone, porcelain or masonry that suits your house. The grill gets the cutout and clearances its manufacturer specifies, with vent panels where gas is enclosed and an access door so the shutoff and connections can be reached.
Counters are sized for real use: space on both sides of the grill, a spot for a cutting board, and enough overhang for stools if you want people to sit and keep the cook company.

Footings or a properly prepared slab so the island does not shift and crack the counters over winter.

Natural gas or propane connected by a licensed gas fitter, plus weather-rated outlets for accessories.

What to plan for
Ventilation is not optional
Gas that leaks inside a closed island has nowhere to go. We add vent panels at the right heights so any gas can escape, which is standard practice for enclosed grill installations.
Plan for the grill you will own next
Grills get replaced. We size cutouts and gas connections so a future replacement fits without rebuilding the island.

Built-in BBQ islands: common questions
Can I build a BBQ island around my existing grill?
Often, yes, if the grill is designed to be built in. Freestanding cart grills usually are not rated for enclosure, so we check the model before planning around it.
Should a BBQ island run on natural gas or propane?
Natural gas is more convenient if you already have service at the house, since you never run out mid-cook. Propane works well when the island is far from the house or gas service is not available. A licensed gas fitter sizes and installs either.
Will a BBQ island crack in an Ontario winter?
Not if it is built on a proper base with materials suited to freeze and thaw. Most cracked islands we see were built on loose patio stones or with counters that absorb water.
